Lemon is a true confectionery classic, and that is exactly why I wanted to honour it. I wanted to recreate the perfect balance between bright citrus freshness and the comforting sweetness of an old-fashioned candy.
Its refreshing acidity awakens the palate and brings a beautiful lightness. It appeals to traditional candy lovers as well as customers looking for a fresh little treat after a meal or simply throughout the day.
I love this recipe because it proves that a classic doesn’t need to be overcomplicated. When it is made with quality ingredients and true craftsmanship, it simply becomes better.
Inspired by traditional Italian candies, we created our own Québec version in our chocolate factory, combining artisanal production with careful attention to flavour.
