Our shortbread cookies began with a childhood treat I had dreamed of tasting again for years. I asked Ludovic to recreate that simple, comforting cookie, and then we wanted to offer a version that would put cocoa in the spotlight.
Our cocoa shortbread has everything I love about a good homemade cookie: a crumbly texture, rich flavour, and the pleasure of enjoying something simple, made with care.
I especially love the contrast it brings to our collection. Alongside the sweetness of vanilla and milk chocolate, cocoa offers a more intensely chocolatey experience.

For over twenty years, Ludovic Fresse has been an independant master chocolatier.
With his wife Florence, they started Chocolat Boréal in 2017, as a small business engaged in its community, with values that would represent them and that would make their children, Édouard and Claire, proud.
