I asked my chocolatier partner to recreate a cookie that no longer existed.
When I was little, a bakery in a village near the American border made shortbread cookies I still remember today. They came in different shapes, were partially dipped in chocolate, and we kept them in the freezer at home. My mother and I also made them together.
The bakery disappeared, but the memory stayed with me. So I asked Ludovic to bring back that simple pleasure: a buttery vanilla shortbread cookie with a touch of salt, partially coated in our milk chocolate.
Today, our shortbread cookies take the shape of beautiful rosettes. Their crumbly texture, buttery flavour, and chocolate coating bring me right back to that childhood treat.

With his wife Florence, they started Chocolat Boréal in 2017, as a small business engaged in its community, with values that would represent them and that would make their children, Édouard and Claire, proud.
